Yes, Meat cupcakes!!! I had a pot-luck dinner party to attend on Friday night. I knew just what to bring! Weirdly enough, I had been thinking about meat cupcakes all week. A friend was having a birthday soon, but didn't eat sweets. I wanted to make her cupcakes, but knew she wouldn't be able to eat them. That's when the obsession started. Why not make super cute cupcakes out of meat?
This was not my own idea, nope I'm really not the only crazy out there that thinks meat cupcakes are stinking fabulous. I had seen twinkie chan's meat cakes a while back, and I found this recipe online as well. I decided to use that recipe since I like to hide veggies in my meatloaf.
I also decided that mine had to be filled with ketchup because I can't eat meatloaf without it. I had to pipe it in and move it around some to get the proper effect. Next time I will probably just blob some under the "frosting" or drizzle it on top.
Overall, these were a hit at the party, though in the beginning the blue potatoes were a little off-putting for some. The instant potatoes left something to be desired as well. If I make these again, I'll try to make sure I have enough time to make regular mashed potatoes. I will also have to remember to make time to let the potatoes cool if I'm going to pipe them on. That was an interesting experience that you shouldn't try at home.
Boyfriend said they were the best cupcakes he's ever had. I guess I'll have to make them again.
